Sausage and Squash

Ingredients:
1 package of soy sausage – any flavor
1 package of pre-cut squash
1 onion
3 stalks of celery
1 – 2 cups of wild rice (depending on how many you are serving)
Seasonings: Olive oil, sea salt / Real salt, pepper, parsley, oregano, garlic powder
Kitchen Items Required:
9 × 13 Glass Baking Dish
Rice Cooker
Cutting Board
Knife
Other Options to Consider: Instead of soy sausage you can use shrimp for this dish as
well. Used the pre-cooked frozen shrimp, you can add this to the glass baking dish with
vegetables instead of the soy sausage.
Salad Option to Consider: With this dish I love to serve the standard dinner salad with
oregano and parsley in it from .
Steps:
1. Get all ingredients and kitchen items required on the counter.
2. Pre-heat oven to 400 degrees.
3. Begin by making the rice – add rice to rice cooker pot, rinse thoroughly with water.
Once rinsed and drained add double the amount of water that you have rice (use 9.5
alkaline water if you have a water machine). Measure the amount of water by putting
your finger in the rice and filling the water to the point on your finger that is double
what the rice is. Turn rice on the “Steam setting” and let cook. It will cook on its own
and it will stop on its own when it is done.
4. Dice the onion and celery and add to the glass baking dish with already cut up
squash.
5. Chop sausage into ½ inch pieces and add to glass baking dish.
6. Add seasonings – drizzle olive oil over entire dish, sea salt / Real salt, pepper,
parsley, oregano and garlic powder to taste.
7. Cover with tinfoil and put in oven for 40 minutes stirring half way through.
8. Use this time to prepare your salad.
9. When rice and sausage mixture are done, add mixture over rice and serve.
10. Cleanup consists of glass baking dish, rice cooker, cutting board and knife.
Drunken Fish
This is one of the few dishes I make where I fry with olive oil. Usually instead of frying I
use vegetable broth to do a light steam on the veggies in the pan. But for this dish you
really need the richness of the fried olive oil. The drunken part comes in with the wine. It
really does not matter what white wine you use, just use whatever you had left over from a
recent wine party. Also, if you like this recipe but do not want to use the wine, by all
means just leave it out.
Prep / Cooking Time: 15 minutes to prepare, 15 – 20 minutes to cook.
