Chilled Watercress Soup with Green Onion

Ingredients:
1 - 32 oz. container of Organic Vegetable Broth
(Imagine or Pacific brand)
2 medium onions thinly sliced
1 large leek, white part only thinly sliced
2 large handfuls of watercress leaves with stems removed
Kitchen Items Required:
Large Pot
Soup Spoon
Knife
Cutting Board
Salad Spinner – for cleaning watercress
Blender
Other Options to Consider: Fresh lemon juice is a nice addition to this soup. Squeeze
some in right before serving.
Steps:
1. Cut onion and leek and add to soup pot, add just enough vegetable broth to cover
bottom of pot.
2. Simmer veggies for 5 minutes on medium high heat.
3. Add remaining broth and bring to a boil. Reduce to low heat and cover and simmer
for 10 minutes.
4. While that is cooking, cut and clean watercress using salad spinner.
5. Once soup is done, remove cover and let cool for 10 minutes.
6. Place cleaned and cut watercress in a blender, pour in 1 cup of the prepared broth and
blend until smooth and transfer to a bowl.
7. Puree remaining broth mixture in the blender and stir into water cress mixture.
8. Ladle into bowls, add fresh lemon juice if desired.

This is my go to soup recipe and the basis for most soups you can make on your own.
Onions, celery and carrots always have and always will be the most sacred additions to
soup.
Prep / Cooking Time: 15 minute preparation, 40 minutes cooking.
