Caramel Apple Pecan Salad with Croutons
Serve right away; the salad doesn't keep, but the croutons keep at least a week stored separately.
Ingredients:
Bread slices
Butter-flavored cooking spray
2 cups Washington apples, cored and chopped
2 cups Granny Smith apples, cored and chopped
1/3 cup chopped pecans
1/3 cup caramel sauce
2 teaspoons lemon juice
2 tablespoons hot water
Directions:
1. Preheat the oven to 350°F. Cut the bread into 1-inch cubes, coat lightly with cooking spray and spread on a nonstick baking sheet. Bake until dry and golden, 10-15 minutes.
2. Toss the apples and pecans in a large bowl.
3. Mix the caramel sauce, lemon juice and hot water, drizzle over the salad and mix well.
4. Add the croutons, toss lightly and serve.
