Bacon-and-Egg-Stuffed Avocados

Ingredients:
2 large avocados
4 strips cooked sugar-free bacon, crumbled
4 large eggs

Avocados are the ketogenic dieter’s dream. A single avocado contains almost 30 grams of fat and only 3
grams of net carbohydrates. You can easily increase the fat content of any meal by adding a few slices of
avocado.
1. Preheat oven to 400°F.
2. Cut avocados in half lengthwise and remove the pit. Scoop some avocado out of each
half to create a well.
3. Sprinkle 1 strip crumbled bacon into each avocado well. Crack 1 egg directly into
each avocado half. Season with salt and black pepper. Place avocados on a baking
sheet
4. Bake for 15 minutes or until egg is cooked to desired doneness.
