Jerk Shrimp with Sweet Jamaican Rice

Ingredients:
1 pound medium shrimp (51-60 count), raw, shell on
Jerk seasoning (for marinade)
2 cups hot cooked rice
1 (11-ounce) can mandarin oranges, drained and chopped
1 (8-ounce) can crushed pineapple, drained
1/2 cup chopped red bell pepper
1/4 cup slivered almonds, toasted
1/2 cup sliced green onions
2 tablespoons flaked coconut, toasted
1/4 teaspoon ground ginger

Directions:
1. Prepare the jerk marinade according to the seasoning package directions.
2. Peel and devein the shrimp, leaving the tails. Marinate while you make the rice.
3. Combine the rice, oranges, pineapple, bell pepper, almonds, green onions, coconut and ginger in a large skillet. Cook over medium-high heat, stirring constantly, until heated through, about 5 minutes.
4. Remove the shrimp from the marinade and broil in a single layer 5-6 inches from the heat 2 minutes. Stir and broil until just pink, about 2 minutes more.
5. Serve with the rice.
