Blackberry Coulis
Blackberry Coulis
Ingredients:
¾ cup fruity red wine
6 tablespoons sugar
1 pint blackberries (about 3 cups)
Directions:
In a heavy-bottomed saucepan set over high heat, combine the wine and sugar
and bring to a boil. Boil for 2 minutes, until the sugar dissolves. Turn the heat
down to medium and simmer for 10 minutes more, to allow the sauce to reduce a
bit. Add the berries and bring the mixture back up to a simmer, then cook (don’t
boil) for 3 minutes. Take the pan off the heat and let the berries cool in the wine
syrup.
