Sweet And Hot Chili
Ingredients:
1 pound ground chuck
1 pound ground pork
2 large yellow onions, diced
6 cloves garlic, minced
1 teaspoon whole cumin seeds
2 tablespoons chili powder
Directions:
1⁄ teaspoon oregano

1 28-ounce can diced tomatoes
1⁄ cup ketchup

1⁄ teaspoon cinnamon
4
1⁄ teaspoon ground cloves

2 tablespoons light brown sugar
2 15-ounce cans kidney beans, rinsed and drained
1 14-ounce can reduced-sodium beef broth
Optional: 1 tablespoon Worcestershire sauce
Water, if needed
Salt and freshly ground black pepper to taste
Optional: hot sauce to taste
1. Add the ground chuck, pork, onion, garlic, cumin seeds, chili powder, and
oregano to a Dutch oven; cook over medium heat until the beef and pork are
browned and cooked through. Drain off any excess fat and discard.
2. Stir in the tomatoes, ketchup, cinnamon, cloves, brown sugar, kidney beans, beef
broth, and Worcestershire sauce (if using). Bring to a simmer; reduce the heat,
cover, and simmer for 1 hour. Stir the chili occasionally, and add water if
needed. Taste for seasoning and add salt and pepper, if needed, and hot sauce, if
desired. You may also wish to add more brown sugar or chili powder according
to your taste.
Use a Slow Cooker
If you want to make the chili in a slow cooker, follow step 1, and then add
the cooked meat mixture, tomatoes, ketchup, cinnamon, cloves, brown sugar,
kidney beans, beef broth, and Worcestershire sauce (if using) to the slow
cooker. Add water if needed to bring the liquid level to the top of the beans
and meat. Cook on low for 6–8 hours.
CINCINNATI CHILI
Cincinnati Chili is served like a sauce over cooked pasta, and then topped with
onion and cheese.
