TUSCAN-STYLE ITALIAN SAUSAGE SOUP WITH RICE AND SPINACH

Ingredients:
1 pound bulk sweet Italian sausage
1 cup converted white rice
6 cups beef broth
1 cup chopped tomatoes
2 tablespoons tomato paste

Directions:
Salt and pepper
One 10-ounce box frozen spinach, thawed, drained, and chopped
Grated Pecorino Romano cheese, for garnish
1. Sauté the sausage in a stockpot, breaking it up as it cooks. When thoroughly
browned, add the rice and stir until it is completely coated in the fat from the
sausage. Add the beef broth, tomatoes, tomato paste, salt, and ¼ teaspoon pepper
and bring to a boil.
2. Reduce the heat and simmer for 12 to 15 minutes, until the rice is tender. Add
the chopped spinach, but make sure it is well drained; squeeze it in a dish towel
if necessary to get the moisture out. Let the soup simmer for a few minutes, then
season with salt and pepper.
3. Ladle the soup into warmed bowls and garnish with the grated cheese.
