CHEESE DRESSING

CHEESE DRESSING

Ingredients:
1 cup all-purpose flour
2 teaspoons salt
½ teaspoon black pepper
¼ teaspoon cayenne pepper
¼ teaspoon paprika
1 egg, beaten
1 cup milk
2 boneless, skinless chicken breasts, each sliced into 6 pieces
4 to 6 cups vegetable oil
1 tablespoon butter or margarine
¼ cup Crystal or Frank’s hot sauce

1. In a medium bowl, combine the flour and dry seasonings and whisk until well
blended. Separately, whisk together the egg and milk.
2. Dip each piece of chicken in the egg mixture, shake it a bit, then dip it in the
flour mixture. Lay the pieces on a baking sheet and refrigerate for 15 minutes.
3. In a large skillet, heat 4 cups of vegetable oil to 375°F. Keep extra oil handy in
case you need more to fry the chicken.
4. Melt the butter and add the hot sauce; set aside in a large bowl.
5. Fry the chicken pieces in batches, until golden brown and cooked through (no
longer pink in the middle). Drain on paper towels. When all the chicken is
cooked, put it in the butter–hot sauce mixture and toss. Serve with celery sticks
and blue cheese dressing on the side.
Serves 2 as an entrée or 4 as an
appetizer

For extra heat, add some cayenne pepper to the hot sauce mixture.
