Spinach-Stuffed Florentine Meatloaf
Spinach-Stuffed Florentine Meatloaf
Ingredients:
1 pound lean ground beef
1 egg, lightly beaten
1 small onion, chopped
1/4 teaspoon salt (optional)
1/4 teaspoon pepper
2 (10-ounce) packages frozen chopped spinach, thawed
1/2 teaspoon nutmeg
1/2 cup shredded mozzarella
Directions:
1. Combine the beef, egg, onion, salt and pepper.
2. Line the bottom and sides of an 8x4-inch loaf pan with two-thirds of the meat.
3. Squeeze the spinach dry and mix with the nutmeg.
4. Spread half the spinach over the meat and press lightly. Sprinkle with the cheese and top with the rest of the spinach.
5. Cover with the remaining meat, sealing the seams.
6. Bake at 350°F for 50-55 minutes, until brown and firm in the center.
