Red Velvet Cake
Red Velvet Cake
Ingredients:
9 eggs, room temperature
1 tsp. vanilla extract
¾ c. coconut flour, sifted
2 Tbsp. unsweetened cocoa powder
½ tsp. salt
½ c. plain Greek yogurt
1 Tbsp. red food coloring
½ c. unsalted butter, room temperature
1 c. erythritol
¾ tsp. baking powder
Directions:
1. Preheat oven to 350ºF. Grease 9” cake pan with nonstick spray.
2. In a bowl, whisk eggs until foamy, then stir in vanilla.
3. In a separate bowl, stir together coconut flour, cocoa powder and salt.
4. In a third bowl, combine Greek yogurt and food coloring.
5. In a fourth, large bowl, cream together butter and erythritol until fluffy.
Stream in egg mixture, beating together until combined.
6. Stir in remaining wet and dry ingredients into large bowl. Once combined, stir
in baking powder.
7. Pour batter into prepared cake pan. Place pan in oven and bake for 40-45
minutes. Let cool 10 minutes before slicing and serving.
