Rookworst

Ingredients:
2 kg pork shoulder
20 g curing salt
7 g ground black pepper
1 rounded tablespoon smoked paprika (more if you like!)
½ teaspoon dried marjoram
½ teaspoon fennel seeds
100 ml brandy

Directions:
1. Cool the meat for a couple of hours, then dice and mince it as finely as possible.
Transfer to a large bowl.
2. Combine all the seasonings in a small dish. Make holes in the meat with your fingertips
and sprinkle the seasoning evenly over the surface. Rub in well before adding the brandy.
Massage the meat so that everything is well incorporated.
3. Prepare the casings and your chosen method of stuffing then fill with the sausage meat
mixture. Link the sausages and then form into a ‘U’, as is traditional with Rookworst if
you wish. Cover and leave in the fridge for 3 hours, then cook the sausages. Place on a
greased roasting tin and bake in the oven (160°C/Gas 3) for 45 minutes.
Frankfurters
Makes 12–15 sausages
These are the archetypal hot dog sausages found mostly in America, or in brine kept in
jars. They are simple to make at home, and much tastier than the shop-bought versions.
You will notice that the majority of Frankfurters are straight sausages, but the ones in this
recipe are not. The reason for this is the straight ones are stuffed into manmade skins. Use
