Cabbage Strudel

Cabbage Strudel

Ingredients:
3 tablespoons coconut oil, plus ¼ cup (60 ml), melted, for brushing
½ head green or red cabbage, shredded
1 apple, grated
¼ teaspoon salt
⅓ cup (65 g) unrefined cane sugar, plus 5 tablespoons for sprinkling
½ cup (80 g) raisins
4 sheets filo pastry

Directions:

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a large saucepan, melt the 3 tablespoons of oil, then add the cabbage and sauté
until tender, about 10 minutes. Add the apple, salt, sugar, and raisins and cook for 3 to
4 minutes, until any juices have cooked off. Remove from the heat and cool
completely, about 30 minutes.

Lay one sheet of filo pastry on the baking sheet. Brush with melted coconut oil and
then sprinkle with 1 tablespoon of sugar. Place a second sheet of filo on top, brush
with oil and sprinkle with sugar. Repeat with the final two sheets of filo. Spread the
cooled filling lengthwise along the top layer of dough. Roll the dough away from you,
tucking in the ends and laying it down on the loose end. Brush the top with oil and
sprinkle with the remaining sugar.

Bake for 30 minutes, until the top is golden brown, then remove from the oven.
Allow to cool for 10 minutes before slicing and serving.
