For The Avocado Astoria Dressing
Ingredients:
1 avocado
2 teaspoons Dijon mustard
1 tablespoon apple cider vinegar
½ teaspoon dried dill
Directions:

Wash and dry the kale. Remove the tough ribs with a sharp knife, then stack the
leaves and slice them into ribbons.

Combine the kale, apple, grapes, celery, and walnuts in a large salad bowl.

For the dressing, scoop the flesh of the avocado into a bowl and mash it well with
a fork. Whisk in the mustard, vinegar, and dill. The dressing will be very thick, so thin
it out with a little water, adding 1 tablespoon at a time; about 3 to 4 tablespoons
should do the trick. Season to taste with sea salt.

Add the dressing to the salad bowl and toss well to coat. Serve immediately, or
cover and refrigerate for up to 3 hours until ready to serve.
