Cranberry-Raspberry Fruit Bars

Ingredients:
Crust
· 1/2 cup chopped nuts (pecans, walnuts, or almonds work great), divided
· 1/2 cup rolled oats, divided
· 3/4 cup whole wheat pastry flour
· 3/4 cup all-purpose flour
· 1/2 cup sugar
· 1/2 teaspoon salt
· tablespoons butter, unsalted, cut into pieces
· 1 egg
· 2 tablespoons olive oil
· 1 teaspoon vanilla extract
Filling
· 5 cups cranberries
· 1/2 cup orange juice
· 3/4 cup sugar
· 1/4 cup cornstarch
· 1 1/2 teaspoons orange zest
· 1 cup raspberries
· 1 teaspoon vanilla

Directions:
1. Preheat oven to 400 degrees F. Coat 9 x 13-inch pan with cooking spray.
2. To make crust, combine 1/4 nuts, 1/4 oats, flour, sugar, and salt in food processor.
Process until nuts are finely ground. Add butter and process until combined.
3. Whisk together egg, oil, and vanilla in bowl. Add mixture to food processor and
pulse for 30-45 seconds. Take out 1/2 cup of mixture and combine in bowl with
remaining nuts and oats. Reserve for topping.
4. To prepare filling, combine 1/2 of cranberries, orange juice, sugar, and cornstarch in
a saucepan. Heat over medium heat, stirring frequently, until mixture has thickened,
about 4-5 minutes. Add remaining cranberries, orange zest, raspberries and vanilla.
5. Spread crust mixture evenly on bottom pan. Press firmly to form crust. Spread fruit
filling on top of crust. Sprinkle with reserved nut topping.
6. Bake for 15 minutes at 400 degrees. Reduce heat to 350 and continue baking until
crust and topping are golden brown, about 25-30 minutes.
7. Cool before cutting.
