Oatmeal Walnut Chocolate Chip Cookies

Ingredients:
· 1 cup rolled oats (not quick-cooking)
· 1/4 cup all-purpose flour
· 1/4 cup whole-wheat pastry flour
· 1/2 teaspoon ground cinnamon
· 1/4 teaspoon baking soda
· 1/4 teaspoon salt
· 1/4 cup tahini (sesame seed paste)
· 4 tablespoons cold unsalted butter, cut into pieces
· 1/3 cup granulated sugar
· 1/3 cup packed light brown sugar
· 1 large egg
· 1/2 tablespoon vanilla extract
· 1/2 cup semisweet or bittersweet chocolate chips
· 1/4 cup chopped walnuts

Directions:
1. Preheat oven to 350 degrees F. Line 2 cookie sheets with parchment paper.
2. Mix together oats, flour, cinnamon, baking soda, and salt in bowl.
3. In another large bowl, whisk together tahini, butter, sugar, brown sugar, egg, and
vanilla until smooth.
4. Add in oat mixture and mix until just moistened.
5. Stir in chocolate chips and walnuts.
6. Place tablespoon-size portions of batter on cookie sheets, allowing space between.
7. Bake for about 14-16 minutes or until cookies are golden brown.
Note: Tahini can be substituted with almond butter or other nut butter.
