Ingredients:
· 12 ounces whole wheat bowtie pasta
· 2 tablespoons olive oil
· 3 chicken breasts, boneless and skinless
· 2 cloves garlic
· 3/4 low-sodium chicken broth
· 1/2 cup half-and-half
· 3/4 cup grated Parmesan cheese
· 2 tablespoons fresh parsley, minced
· Freshly ground black pepper, to taste
Directions:
1. Cook pasta according to package directions. Drain and set aside.
2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add
chicken breasts and cook until golden brown and done in the middle, about 5-6
minutes per side. Remove from pan, slice into bite-size pieces, set aside.
3. Add remaining 2 tablespoons of olive oil to pan. Add garlic and sauté for 1 minute.
Pour in broth and let it boil for about 2 minutes. Add half-and-half and whisk
together. Continuing cooking, stirring frequently, for several minutes until liquid
starts to thicken.
4. Remove pan from and add Parmesan cheese, chicken, and pasta. Season with black
pepper. Toss all ingredients together until well combined. If sauce is too thick, add a
little extra chicken broth to thin it down.
5. Serve topped with parsley and additional Parmesan cheese, if desired.
