Ingredients:
½ cup all-purpose flour
2 teaspoons grated lemon zest
1 teaspoon salt
¼ teaspoon black pepper
½ cup lager beer
2 tablespoons diet margarine, melted
1 pound red snapper fillets, cut crosswise into ½-inch-wide strips
Directions:
Red pepper flakes
4 lemon wedges
1. Preheat the oven to 350°F.
2. Combine the flour, lemon zest, salt, and black pepper in a medium bowl.
3. In a separate medium bowl, whisk the beer and melted margarine together.
4. Dip each fish strip in the beer butter and then in the flour mixture. Lay the fish
on a baking sheet that has been sprayed with cooking spray.
5. Bake for 15 to 18 minutes, until brown.
6. Serve with a sprinkle of red pepper flakes and a lemon wedge.
