Ihop

Ingredients:
1 tablespoon diet margarine
¼ cup diced yellow onion
¼ cup diced green bell pepper
¼ cup diced cooked turkey ham
4 eggs, beaten
2 tablespoons water
¼ teaspoon salt
¼ cup diced tomato
⅓ cup sliced cooked small breakfast turkey sausage links
¼ cup crumbled cooked turkey bacon
⅓ cup shredded deli roast beef
¾ cup finely shredded low-fat Cheddar cheese

Directions:
1. In a saucepan over medium-low heat, melt the margarine and add the onion and
bell pepper.
2. Stir until the onion and bell pepper are soft but not browned.
3. Add the diced ham and stir until the ham is heated through.
4. Immediately remove from the heat and set the mixture aside.
5. In a mixing bowl, combine the eggs, water, and salt; beat or stir well. Set
aside.
6. Heat a 12-inch nonstick skillet over medium-low heat; spray with cooking
spray.
7. Pour the egg mixture into the pan and sprinkle with the vegetable and ham
mixture, tomato, sausage, bacon, half the roast beef, and ½ cup of the cheese.
8. Cover the pan until the omelet starts to set, 2 to 3 minutes.
9. Immediately remove the lid and fold the omelet from the sides to the middle or
in half. Sprinkle with the rest of the roast beef and the remaining ¼ cup cheese.
