Chook Divan, Lightened Up

24 oz boneless skinless chicken breasts (or 18 oz cooked)
Salt and fresh ground pepper
1 tbsp butter
2 tsp far more virgin olive oil
2 cloves garlic, crushed
2 tbsp shallots, minced (onions would function also)
4 tbsp flour
1 cup fat absolutely free chicken broth
1 cup excess weight cost-free milk
2 oz dry sherry (white Wine would effort)
6 oz shredded decreased-fat swiss
1/4 cup grated parmesan cheese
1/4 cup skilled full wheat breadcrumbs

Deliver a large pot of water to a boil. add the broccoli and blanch 3 minutes. Rinse with chilly water to finish the cooking. Drain properly and Set aside.

Organize the broccoli in a casserole dish and pour 50% of the sauce over the broccoli. Prepare the chicken on best and protect with remaining sauce. Sprinkle the getting swiss cheese, grated parmesan and top with breadcrumbs. Spray a small oil on best.
Bake 30 minutes, serve scorching.
