BAKED SWEET POTATO “FRIES”

Ingredients:
8 sweet potatoes
¼ cup extra-virgin olive oil
2 sprigs chopped fresh rosemary
1 teaspoon kosher salt, or to taste

Directions:
Freshly ground black pepper to taste
1. Preheat the oven to 350°F.
2. Peel the potatoes, if desired. Cut them into ½-inch-thick wedges. Place the potato
wedges into a large bowl of cool water and allow them to soak for about 20 minutes.
3. Pat the potato wedges dry with paper towels. Toss them with the olive oil and the
rosemary. Arrange the potato wedges in a single layer on a parchment-lined baking
sheet. Bake them for about 25 minutes, then turn over the wedges, using a large
spatula.
4. Continue to bake the fries for another 15 minutes or until they are soft inside and
crispy on the outside. Remove the fries from the oven and sprinkle them with the salt
and with pepper to taste.
BUTTERMILK FRIED CHICKEN
This is a great Sunday-night dinner. The larger pieces of chicken, such as the breast or
large thighs, will take a little longer to cook. If they start to darken too much in the hot
oil, place into a preheated, 350°F oven until they are thoroughly cooked.

4 pounds chicken pieces (drumsticks, thighs, wings, and breast)
Kosher salt to taste
Freshly ground black pepper to taste, plus 1 tablespoon pepper for the coating
