Garlic Shoestring Fries
Garlic Shoestring Fries
Ingredients:
5 medium russet potatoes
3 cups vegetable oil
2 garlic cloves, minced
¼ cup stemmed, chopped fresh parsley
Directions:
Kosher salt and freshly ground black pepper to taste
Truffle oil, for drizzling
1. Wash the potatoes but do not peel them. Cut them into ¼-inch strips on a mandoline
or with a knife.
2. Heat the vegetable oil in a deep fryer according to the manufacturer’s directions.
When very hot, transfer the potato strips to the fryer and fry for 5 to 7 minutes or until
soft inside and crisp and golden outside.
3. Remove the fries from the fryer and place them on a large platter. Toss the fries
with the garlic, parsley, salt, and pepper. Drizzle with truffle oil and serve
immediately.
BEER-BATTERED ONION RINGS
When picking out the onions to make this dish, look for ones that are heavy for their
size. Dry, papery skins are a good quality in an onion, but soft spots are not. Once you
cut into an onion, wrap it tightly in plastic wrap and refrigerate it. Since onions lose
moisture rapidly once cut, use the onion within several days. These onion rings go
great with steak, burgers, and all kinds of sandwiches. If you make these often, invest
in a small countertop fryer so the onion rings are perfect every time.
