Homemade Wheat Buttermilk Biscuits

Ingredients:
1 cup whole-wheat flour
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
2 teaspoons sugar
½ teaspoon kosher salt
½ cup (1 stick) unsalted butter, chilled and cut into pieces
1 cup well-chilled buttermilk

Directions:
1. Preheat the oven to 450°F.
2. In a large bowl, whisk the whole-wheat flour, all-purpose flour, baking powder,
baking soda, sugar, and salt. Add the butter. Rub the mixture with your fingers until it
resembles coarse meal. Stir the buttermilk into the dry ingredients until the flour
mixture is moistened.
3. Turn the dough out onto a lightly floured surface and knead it lightly with the heel of
your hand 4 or 5 times. Roll or pat the dough out to about a 1-inch thickness.
4. Cut the dough into biscuits, using a 3-inch biscuit cutter or a drinking glass. Reroll
the dough scraps to make more biscuits. Arrange them evenly on an ungreased baking
sheet. Bake the biscuits for 12 to 14 minutes, or until brown.

This was a tough one for me at first. Measuring wasn’t my thing. I
thought you could just add a little of this and a little of that but my
biscuits came out like pancakes. Make sure you follow the directions!”

These easy-to-make biscuits, which taste great on their own or with various egg
dishes, are best made with fresh chives. If you don’t have any, you can substitute
scallions (just the green part). Serve these biscuits warm, with plenty of butter.
