Stat Juice
Ingredients:
1 pound kale, washed and trimmed
½ ripe pineapple, peeled, cored, and diced
1 celery stalk, trimmed and cut into large pieces
2 cucumbers, peeled and cut into large pieces
2 apples, peeled, cored, and quartered
¼-inch piece ginger, peeled
1 lemon, peeled and quartered
Directions:
1. Using a large juicer, extract the juice from the kale, pineapple, celery, cucumber,
apple, ginger, and lemon.
2. Pour the juice into a large cocktail shaker and shake with some ice cubes.
3. Serve the juice in tall glasses, over ice if desired.

Classic hollandaise sauce is made with butter, egg yolks, and lemon, but this gets a
twist by adding lime juice, cilantro, and a little Tabasco sauce.

For the hollandaise sauce:
