Roasted Corn Relish
Roasted Corn Relish
Ingredients:
3 ears corn, husked, all silk removed
¼ cup extra-virgin olive oil
3 tablespoon chopped red onion
1 tablespoon stemmed, chopped fresh cilantro
¼ diced bell pepper
1 tablespoon minced jalapeño chile
2 garlic cloves, minced
Directions:
Juice of ½ lemon
Kosher salt and freshly ground black pepper to taste
1. Preheat a grill or a grill pan over medium-high heat for 1 or 2 minutes. Brush the
corn with the olive oil.
2. Grill the corn on all sides, turning occasionally, for 3 to 5 minutes, or until grill
marks appear. Set the corn aside for 30 minutes or until it comes to room temperature.
3. Cut the kernels from the ears of corn. Transfer the corn kernels to a medium bowl.
Stir in the chopped onion, cilantro, bell pepper, chile, garlic, lemon juice, salt, and
pepper.
4. When all the ingredients have been well incorporated, cover and chill the relish.
Bring the relish to room temperature before serving.

spice blend is the answer. Make it in
advance and store it in a Mason jar. It will
keep at room temperature for weeks.
