TROPICAL FRUIT RELISH

Ingredients:
½ large pineapple, cored and diced
1 large peach, peeled, pitted, and diced
1 small papaya, peeled, pitted, and diced
1 kiwi, peeled and diced
1 large mango, peeled, pitted, and diced
4 strawberries, hulled and sliced
¼ cup extra-virgin olive oil
3 mint leaves, cut into chiffonade
¼ bunch chopped fresh cilantro, leaves only, stemmed
2 tablespoons agave nectar
2 tablespoons Champagne vinegar

Directions:
1. In a large mixing bowl, combine the pineapple, peach, papaya, kiwi, mango, and
strawberries.
2. To make the dressing, in a small bowl, whisk the olive oil, mint, cilantro, agave
nectar, and Champagne vinegar. Pour the dressing over the fruit and chill the relish for
30 minutes before serving.
FRESH TOMATO SALSA
Another great dish to keep in the fridge, this salsa is amazing on fish, chicken, salads,
or just with some nice chips. Best stored in a Mason jar, it will last for at least a week
if you keep it covered and chilled. This versatile recipe lends itself to different
variations. You’ll be surprised how many different ways you can make it. Go
Caribbean by adding some avocado. For a Mexican flavor, add some black beans, or
stir in some chopped pineapple for a truly tropical flavor. And if you don’t have
agave, use honey or sugar instead.
