Peppermint Brownies
Peppermint Brownies
Ingredients:
□ 3/4 cup unsalted butter, ghee, or coconut oil, melted
□ 1 teaspoon vanilla extract (gluten-free)
□ 3 large eggs, beaten
□ 1 cup honey
□ 1 teaspoon lemon juice
□ 2 cups blanched almond flour
□ 1 1/2 cups cocoa powder
□ 1/2 teaspoon baking soda
□ 10 drops peppermint essential oil
Directions:
Preheat the oven to 350°F and cover the bottom of a brownie pan with parchment.
In a medium bowl, whisk together the fat, vanilla, eggs, honey, and lemon juice
until well combined. Mix the almond flour, cocoa, and baking soda in a small bowl.
Add the dry mixture to the wet and stir until well combined. Stir in the peppermint
oil and pour the mixture into the prepared baking dish. Bake for 35 minutes, or
until a knife inserted in the center comes out clean. Remove from the oven and
cool in the pan for 30 minutes. Slide a knife around the edge of the pan to release.
Cut the brownies into squares, serve, and enjoy.
For a lower carb version: Use 2 teaspoons stevia extract powder in place of the honey. Add 1 cup
canned pumpkin to the wet mix.
