Potato Sponge Bread

Servings: 1

Ingredients:
• 4 Med Potato
• 2 tbsp Sugar
• 1 tbsp Salt
• 1 cup Yeast
• *dissolved in:
• 1/2 cup Water, lukewarm
• 4 cup Flour, bread

Instructions:
1. Pare and boil the potatoes and although incredibly hot, mash finely and rub in the course of a sieve or colander.
2. Add the sugar, salt and dissolved yeast cake. Stir flour into the mix, overcoming very well. Add additional flour to kind smallooth dough.
3. Convert on to a floured board and knead. Return to bowl, cover and allow for add above evening. Inside the early morning, sort into loaves, allow add until mild and bake at 350-F for 45 to 50 minutes.
