Southern Fried Okra
Ingredients:
okra, raw
milk, buttermilk, fluid, cultured, lowfat
oil, olive, salad or cooking
cornmeal, degermed, unenriched, yellow
salt, table
sugars, granulated
spices, pepper, red or cayenne
Directions:
Cover okra with buttermilk in a large bowl.
Place in the fridge for 10 minutes (longer is okay).
Meanwhile, heat oil to 375 degrees F in a Dutch oven oryikesa Fry Daddy!
Does anyone other than me still own one?
Mix dry ingredients in a small bowl.
Remove okra from buttermilk.
Dredge through cornmeal mix, shake off excess, and drop into hot oil.
Fry okra in batches for about 3 minutes or until golden brown.
Drain on paper towels.
As I stated above, I use these as croutons for a salad; it makes me feel better about eating this southern fried okra!
