Tangy Mashed Potatoes
Ingredients:
potatoes, raw, skin
yogurt, greek, plain, nonfat
onions, spring or scallions (includes tops and bulb), raw
margarine, regular, 80% fat, composite, stick, without salt
Directions:
Place potatoes in boiling water and cook until tender (about 20 minutes).
Drain.
In a bowl, combine potatoes, yogurt and margarine.
Beat with electric mixer until fluffy.
Mix in green onion; season with salt and pepper to taste.
Serve hot.
