New York-Style Pizza Dough

Ingredients:
wheat flours, bread, unenriched
sugars, granulated
salt, table
leavening agents, yeast, baker's, active dry
oil, olive, salad or cooking
water, bottled, generic
water, bottled, generic

Directions:

Combine flour, sugar, salt and yeast in the bowl of a food processor.
Pulse 3 to 4 times until incorporated.
Add olive oil and both amounts of water.
Run food processor until mixture forms a ball that rides around the bowl above the blade.
This will take about 15 seconds.
Continue processing 15 seconds longer.

Transfer dough ball to a lightly floured surface and knead once or twice by hand until a smooth ball is formed.
Place in a covered container or in a zipper-lock freezer bag.
Place in the refrigerator and allow to rise at least 1 day, and up to 5.
Remove from refrigerator, shape it into a ball, and allow to rest at room temperature for at least 2 hours before baking.
Notes: 1.
The longer you let it rise the more sourdough flavor it has.

This makes enough dough for a 14 pizza.
