Mango sorbet

Ingredients:
175g/6oz granulated sugar
3 green cardamom pods, crack
2 ripe mangoes
3 egg whites

Directions:
First, put the sugar and cardamom pods within a significant saucepan, pour inside 600ml/1pt chilly water and warmth carefully, stirring often, until eventually the sugar is made up of dissolved. Strengthen the warmth and deliver to the boil, then boil for 7 minutes without the need of stirring. Remove towards the warmth and go away to interesting.
Then, in the meantime, peel the mangoes and remove as a great deal flesh as opportunity against the stones. Purée the flesh in just a blender or foods processor, then pour into a shallow container.
