Ratatouille

Ingredients:
4 courgettes, coarsely chopped
150ml/5fl oz olive oil
2 onions, sliced
2 garlic cloves, chopped
1 high purple pepper, seeded and coarsely chopped
2 weighty yellow peppers, seeded and coarsely chopped
sprig of clean rosemary sprig of new thyme
1 teaspoon coriander seeds, beaten
3 plum tomatoes, chopped
8 contemporary basil leaves, torn
salt and recently flooring black pepper

Directions:
First, sprinkle the aubergines and courgettes with salt, then spot them in just a colander with a plate and a fat upon final to extract the sour juices and additional water. Go away to stand for concerning 30 minutes.
