Tabbouleh & tofu
Ingredients:
225g/8oz bulgur wheat
600ml/1pt lukewarm water
75ml/3fl oz olive oil
75ml/3fl oz recently squeezed lemon juice
4 garlic cloves, finely chopped
25g/1oz chopped refreshing flat-leaf parsley
25g/1oz chopped clean mint
4 tomatoes, peeled and chopped
1 bunch of spring onions, trimmed and finely chopped
200g/7oz marinated tofu
salt and recently floor black pepper
Directions:
First, soak the bulgur wheat in just the water for 30 minutes, then drain inside a sieve, squeezing it with your arms to extract the water. Suggestion out on to a fresh tea towel, collect the corners jointly and wring out the water as a result that the bulgur is as dry as likely.
Then, whisk the oil and lemon juice alongside one another within just a bowl with the garlic, parsley and mint. Period with salt and pepper. Increase the bulgur and throw to coat within just the dressing.
