Spinach & mushroom bhaji
Ingredients:
1 tablespoon mustard seeds
2 teaspoons coriander seeds
1 teaspoon cumin seeds
2 garlic cloves, close to chopped
2.5cm/1within just piece of contemporary root ginger, around chopped
50ml/2fl oz vegetable oil
2 massive onions, thinly sliced
2 teaspoons flooring turmeric
11â„2 teaspoons chilli powder
450g/1lb button mushrooms, thickly sliced
400g/14oz canned chopped plum tomatoes
900g/2lb clean spinach, about shredded
4 tablespoons desiccated or shredded coconut, to garnish
salt and recently floor

Directions:
First, put the mustard, coriander and cumin seeds inside a significant large flameproof casserole dish, and dry-roast above a medium warm for 2â€"3 minutes until finally aromatic, stirring all the season.
