Seafood pilaki

Ingredients:

2 tablespoons olive oil
2 garlic cloves, overwhelmed
1 higher onion, chopped
2 celery sticks, chopped
3 enormous carrots, sliced
finely grated zest and juice of
1 lemon
400g/14oz canned chopped plum tomatoes
900g/2lb mussels
700g/11⁄2lb monkfish fillet, trimmed and reduce into chunks
450g/1lb cleaned squid, slash into rings
1⁄2 tablespoon chopped contemporary flat-leaf parsley

Directions:
