Ingredients:

6 herrings, filleted
1 carrot, thinly sliced
1 onion, sliced into slim rings
For the marinade
300ml/10fl oz white wine vinegar
225g/8oz onion, sliced into skinny rings
1 carrot, sliced
8 sprigs of refreshing flat-leaf parsley
3 bay leaves
sprig of fresh new tarragon
1⁄2 tablespoon salt
12 black peppercorns

Directions:
