Smoked fish with white sauce

Ingredients:
900g/2lb haddock fillets, slice into serving-sized parts
225ml/8fl oz milk
225ml/8fl oz water
For the white sauce
600ml/1pt milk
1 onion, halved
1 bay leaf
pinch of flooring white pepper
50g/2oz butter
40g/11⁄2oz simple flour
1â€"2 tablespoons chopped new flat-leaf parsley
salt and recently flooring black pepper

Directions:
First, for the white sauce, merge the milk inside a very low pan with the onion, bay leaf and white pepper.
