Grilled Bacon wrapped Chicken
Ingredients:
chicken, broiler or fryers, breast, skinless, boneless, meat only, raw
bacon, meatless
sugars, brown
salt, table
spices, chili powder
spices, paprika
spices, garlic powder
spices, onion powder
spices, pepper, black
spices, pepper, red or cayenne
Directions:
Trim chicken breasts of any excess fat and cut into bite size pieces.
Mix rub ingredients and season chicken pieces well.
Cover and refrigerate for 1 or 2 hours (or longer).
Cut bacon slices in half and wrap chicken pieces.
Secure with bbq skewers.
If using wooden or bamboo skewers soak in water for at least 1 hour prior to use.
Set up your grill for Direct Heat.
Make a grill shield from heavy-duty aluminum foil.
Fold in half long way and crimp the edges.
Grill chicken breast directly over heat for about 3 to 5 minutes on the first side.
Rotate on grill as needed to avoid hot spots.
Flip over and continue cooking until the juices run clear and the bacon is crispy.
Remove from the grill and cool 2 or 3 minutes before serving.
