Caramel Apple Muffins

Ingredients:
apples, raw, with skin
raisins, seeded
sugars, brown
margarine, regular, 80% fat, composite, stick, without salt
spices, cinnamon, ground
spices, nutmeg, ground
spices, cloves, ground
wheat flour, white, all-purpose, unenriched
pumpkin, raw
leavening agents, baking powder, double-acting, sodium aluminum sulfate
salt, table
nuts, pecans

Directions:
In saucepan, combine apples, raisins, brown sugar, margarine, cinnamon, nutmeg, cloves and 1/2 cup water.
Bring to a boil, stirring, until sugar is dissolved.
Remove from heat and allow to cool.
Preheat oven to 350.
In large bowl, combine flour, pumpkin pie spice, baking powder and salt.
Add the apple mixture to the flour mixture and stir until just blended.
Fold in the pecans.
Divide batter among muffin cups.
Bake 20-25 minutes.
