Gluten Free Quick Bread (egg and Dairy Free, Too)
Ingredients:
wheat flour, white, all-purpose, unenriched
cornmeal, degermed, unenriched, yellow
rice flour, white, unenriched
leavening agents, baking powder, double-acting, sodium aluminum sulfate
salt, table
honey
applesauce, canned, unsweetened, without added ascorbic acid (includes usda commodity)
water, bottled, generic
Directions:
Preheat oven to 350F
Grease a 9x5" loaf pan.
Mix flours, baking powder and salt in large bowl.
Add honey, applesauce and water.
Mix well.
It should be like a cake batter - add a little water if it's dry.
Pour batter into the prepared pan, and bake for 1 hour or until lightly browned.
Allow to cool in pan for a minute or two, then remove to cool completely on a wire rack.
