Blackberry Streusel Cake Recipe
Ingredients:
wheat flour, white, all-purpose, unenriched
sugars, granulated
leavening agents, baking soda
spices, cinnamon, ground
spices, nutmeg, ground
applesauce, canned, unsweetened, without added ascorbic acid (includes usda commodity)
blackberries, raw
sugars, brown
oats
apple juice, canned or bottled, unsweetened, without added ascorbic acid
Directions:
Preheat oven to 350 F. Lightly spray 8-inch baking pan with nonfat cooking spray.
Combine 1 1/2 c. flour, sugar, baking soda, cinnamon and nutmeg and mix well.
Add in applesauce and Blackberries to flour mix and mix till dry ingredients are moistened.
Spread batter into prepared pan.
In a small bowl, combine brown sugar, oatmeal and 2 Tbsp.
flour.
Stir in juice concentrate and blend till mix is crumbly.
Sprinkle crumb topping over batter and bake in preheated oven for 25 min, till knife inserted in center comes out clean.
Cold for 15 min before cutting.
