Asparagus & potato salad

Ingredients:
450g/1lb reduced waxy potatoes
125ml/4fl oz more virgin olive oil
2 shallots, finely chopped)
4 tablespoons white wine vinegar
900g/2lb clean asparagus recommendations or youthful asparagus, trimmed
225g/8oz more youthful spinach leaves, rinsed and fatigued

Directions:
