Foolproof Sesame Seed and Cheese Grissini

Ingredients:
wheat flours, bread, unenriched
wheat flour, white, cake, enriched
leavening agents, yeast, baker's, active dry
salt, table
sugars, granulated
oil, olive, salad or cooking
water, bottled, generic
seeds, sesame seeds, whole, dried
cheese, parmesan, hard

Directions:
Mix the bread flour and cake flour in a bowl.
Add the salt, sugar, and yeast without letting them touch .
Combine the warm water and olive oil, and set aside.
Add the Step 2 mixture to Step 1, and mix with a spatula.
Knead with your hands until the flour on the sides of the bowls comes off cleanly.
Divide the dough in half, and mix one dough with the black sesame seeds, and the other with the grated cheese.
Cover with a tightly wrung out kitchen towel, and let rise for 30 ~ 40 minutes.
You can use your oven's bread-rising function.
When the rising has finished, press down with your palm to get the air out.
Divide the dough into 8 ~ 10 portions.
Roll out 8 ~ 10 portions of dough into the length of a baking sheet, and arrange them on the baking sheet.
Bake in the preheated oven for 20 ~ 25 minutes at 200C.
Do the same with the cheese dough.
Let cool on a rack to prevent condensation from making them soggy.
