Tropical Granola Parfait

Ingredients:
oats
shortening confectionery, coconut (hydrogenated) and or palm kernel (hydrogenated)
sugars, brown
spices, nutmeg, ground
nuts, macadamia nuts, raw
salt, table
syrup, maple, canadian
oil, olive, salad or cooking
pineapple, raw, all varieties
yogurt, greek, plain, nonfat
lemon juice, raw
goji berries, dried
honey
yogurt, greek, plain, nonfat

Directions:
Preheat oven to 275 F.
Combine oats, coconut, sugar, nutmeg, nuts, and salt in a bowl.
Pour in syrup and vegetable oil and stir to combine.
Spread evenly over a baking sheet and bake for 35-45 minutes, stirring every 15 minutes until crisp and lightly browned.
Remove the baking sheet from the and allow granola to cool.
Then stir in dried pineapple.
Store in an airtight container until ready to use.
For the parfait combine lemon yogurt with lemon juice.
Layer parfaits in this order: granola, lemon yogurt, berries, drizzle of honey, granola, vanilla yogurt, granola and more berries.
