Vichyssoise
Ingredients:
pinch of floor nutmeg
3 heavy leeks, trimmed and thinly sliced
1 onion, thinly sliced
500g/1lb 2oz potatoes, chopped)
900ml/11â„2pt vegetable stock
2 teaspoons lemon juice
1â„4 teaspoon flooring coriander
1 bay leaf
1 egg yolk
150ml/5fl oz solitary product salt and recently flooring
black pepper
Directions:
First, soften the butter within just a saucepan, and sweat the leeks and onion, stirring at times, for over 5 minutes. Increase the potatoes, stock, lemon juice, nutmeg, coriander and bay leaf. Year with salt and pepper. Convey to the boil, protect and simmer for 30 minutes until finally the greens are comfortable.
Then, interesting the soup a small, remove the bay leaf and purée the soup inside of a blender or foods processor until eventually tender. Pour into a new pan.
Finally, combine the egg yolk into the product, increase a small of the soup to the blend, then whisk it all again into the soup and reheat carefully. Amazing and chill ahead of serving.
