Leek & potato soup

Ingredients:
50g/2oz butter
450g/1lb leeks, trimmed and finely sliced
700g/11⁄2lb potatoes, somewhere around chopped
900ml/11⁄2pt vegetable stock
4 sprigs of new rosemary
450ml/3⁄4pt milk
2 tablespoons chopped refreshing flat-leaf parsley
2 tablespoons crème fraîche
salt and floor black pepper

Directions:
First, soften the butter in just a high saucepan, increase the leeks and sweat carefully for 5 minutes, stirring typically. Increase the potatoes, stock, rosemary and milk. Provide to the boil, then do away with the warm, deal with and simmer carefully for 20â€"25 minutes until finally the greens are comfortable. Remove in opposition to the warm.
Finally, amazing for 10 minutes. Discard the rosemary, then pour into a blender or foodstuff processor, and purée right until delicate. Return to a new pan, and stir inside the parsley and crème fraîche. Time to flavor. Reheat carefully and provide.
