Ingredients:
8 dried shiitake mushrooms
25g/1oz cornflour
3 tablespoons dry sherry
100g/4oz pork loin
1.2 litres/2pt chicken stock
50g/2oz bamboo shoots, sliced
1 tablespoon mild soy sauce
2 tablespoons pink wine vinegar
1 egg, frivolously crushed
225g/8oz tofu, diced salt and recently flooring
black pepper
Directions:
First, inside a medium bowl, soak the mushrooms inside of hot water for 20 minutes, then drain, squeeze out any added dampness and reduce into 1cm/1â„2inside of slices.
Then, within just a reduced dish, stir the cornflour into the sherry and mounted apart.
Then, put the pork loin within a superior large pan and carefully protect with water. Simmer till soft, then awesome and shred.
Then, carry the stock to the boil. Stir in just the pork, mushrooms and bamboo shoots. Simmer for 10 minutes, then stir in just the soy sauce and pink wine vinegar. Period with salt and pepper, then stir in just the reserved cornflour blend. Retain stirring till the soup incorporates thickened.
Finally, remove in opposition to the warmth and whisk in just the egg. Combine inside of the tofu and warm during. Provide the soup incredibly hot.
