Courgette & spinach soup
Ingredients:

2 tablespoons vegetable oil
1 onion, chopped
2 courgettes, chopped
1 potato, chopped
100g/4oz spinach, chopped
3 sprigs of new flat-leaf parsley
1.2 litres/2pt vegetable stock
150ml/5fl oz double product salt and recently floor
black pepper
Directions:
First, warm the oil within just a saucepan, and sweat the onion and courgette till the onion is clear.
Then, incorporate the potato, spinach, parsley and stock. Convey to the boil, stop the warmth and simmer the soup for 20 minutes. Allow for to interesting prior to mixing or processing to a purée.
Finally, return the soup to a fresh pan, stir inside of the product and year with salt and pepper. Reheat carefully with no boiling and provide. substances.
