Pressure-Cooked Anko (Red Bean Paste) In a Flash
Ingredients:
beans, adzuki, mature seeds, raw
water, bottled, generic
sugars, granulated
salt, table
Directions:
Rinse the adzuki beans and drain.
Put the beans in a pressure cooker, fill just enough water (not listed) to cover the beans, cook on high heat, then once they boil, strain.
Return the beans to the pressure cooker, add water (in the amount listed), cover, cook on high heat.
When the pressure indicator pops up, reduce to low heat, and cook for 7 minutes.
Remove from heat, and remove the lid when the pressure indicator drops.
Add sugar and salt, simmer for 10 minutes on medium heat, then it's done!
